Groupe Chez Gérard (also known as Paramount Restaurants plc) comprised four restaurant brands (Chez Gérard, Bertorelli, Livebait and Café Fish) mainly located in London. During Trident's ownership, the group acquired Caffé Uno, a nationwide chain, doubling the size of the business. The fund backed an experienced management team in a strategy of greater efficiency and expansion. Growth was achieved through acquisition (e.g. Caffé Uno), and through extension of the strong Chez Gérard brand into new locations, including concessions in hotels and airports. The company was sold to a financial buyer.
